Illini Homemade Tomato Sauce

The perfect tomato is one of the joys of summer. It’s perfectly round, with smooth bright red skin, and inside it is juicy and full of robust flavor. But what happens to the tomatoes that don’t fit this description because they’ve grown with imperfections or been snacked on by some hungry insects? They’re turned into sauce of course! A partnership between the University of Illinois’ Student Sustainable Farm, Department of Crop Science, Department of Food Science and Human Nutrition’s Pilot Plant, Dining Services, and the Student Sustainability Committee is making sure that every tomato grown on campus lives up to its potential as part of a healthy meal.
